Last weekend Scott offered to take me out to eat at “the restaurant of my choice”. After going through a quick list of our favorites, we decided together that it had been too long since we went to Red Lobster and I was in the mood for Cheddar Biscuits!
As we sat down and were going through the menu we each picked a meal that we would order and agreed to share with the other. (There is just so much that looks good!) The minute we saw the Peach Bourbon Bacon Wrapped Scallops on the menu we knew this had to be one of the two meals we ordered. I have to say, these were some of the most amazing scallops I have ever tasted, and without a doubt it was the Peach Bourbon BBQ that made them so special.
Later that week as I was trying to think of what I was going to do with the chicken I had thawed in the fridge I realized that wrapping the chicken in bacon and covering it in Peach Bourbon BBQ sauce would be amazing!
It took a few batches to finally find the perfect way to re-create the Peach Bourbon BBQ sauce we had a Red Lobster. This recipe would be great with scallops, pork, and chicken or just about anything that you could wrap in bacon and cover with BBQ sauce!
Peach Bourbon BBQ Bacon Wrapped Chicken

4 Chicken Breasts
16 Strips of Bacon
For the BBQ Sauce:
2 cups of your favorite BBQ sauce (I used Sweet Baby Ray’s Regular BBQ Sauce)
1/2 cup ripe fresh peaches (peeled, seeded and chopped)
1 1/2 Tbsp Bourbon
For the Peach Bourbon BBQ Sauce:
Combine everything in a small/medium sized sauce pan. Bring to a boil while stirring for 8-10 minutes, which will allow the alcohol to cook off. Cool down the mixture and blend in a food processor or blender until smooth.
To Make the Bacon Wrapped Chicken:
Pre-heat the oven to 325 and line a baking sheet with tin foil. Pre-cook the bacon for about 7-10 minutes or until lightly brown and flexible.
Pound chicken breast out until flat. Season with salt and pepper, fold chicken in half and then wrap each piece of chicken with four pieces of bacon and place chicken in a baking dish or on a baking sheet.
Bake chicken for about 45 minutes to an hour (depending on the size of the chicken), or until no longer pink in the middle and the juices run clear. About 5-10 minutes prior to the chicken being done, brush the Peach Bourbon BBQ sauce over the chicken.
