Chocolate Chip Cupcakes with Chocolate Chip Cookie Dough Frosting

Ingredients:
For the Cupcakes:
3 Sticks Unsalted Butter, at room temperature
1 1/2 Cups Light Brown Sugar, packed
4 Large Eggs
2 2/3 Cups All-Purpose Flour
1 Tsp. Baking Soda
1 Tsp. Baking Powder
1/4 Tsp. Salt
1 Cup Milk
2 Tsp. Vanilla Extract
1 Cup Mini-Chocolate Chip Morsels

For the Frosting:
3 Sticks Unsalted Butter, at room temperature
3/4 Cup Light Brown Sugar, packed
3 1/2 Cups Powdered Sugar
1 Cup All-Purpose Flour
1/2 Tsp. Salt
3 Tbsp. Milk
2 1/2 Tsp. Vanilla Extract

Directions:
For the Cupcakes: Preheat the oven to 350 degrees. Line two cupcakes pans with paper liners, for a total of 24 cupcakes. Using a stand mixer with the paddle attachment, in the bowl beat together the butter and brown sugar on medium-high speed until the mixture is light and fluffy, about 2-3 minutes. One at a time, beat in each egg ensuring each egg is well mixed and stopping to scrap down the sides of the bowl if needed.

In a medium bowl stir together the flour, baking powder, baking soda and salt. On slow speed add the dry ingredients to the mixing bowl while also slowing adding the milk. Mix just until ingredients are incorporated. Blend in the vanilla. Removing the bowl from the base of the stand mixer, fold in the mini-chocolate chip morsels with a spoon or spatula.

Using an ice cream scoop, evenly divide the batter into the cupcake liners. Bake the cupcakes for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cook in the hot pan for approximately 5 minutes, and then transfer them to a wire rack and cool completely.

For the Frosting: Using a stand mixer with the paddle attachment, in the bowl cream the butter and brown sugar together. Slowly add in the powdered sugar until the mixture is smooth. Mix in the flour and salt until incorporated. On medium-high speed beat in the milk and vanilla extract until the frosting is smooth and well blended.

Once the cupcakes are completely cooled, frost cupcakes as desired and top with mini-chocolate chip morsels for decorations. (We used a Wilton 1M tip for frosting our cupcakes!)
